I was sick of making cabbage soup, and had some Jenni-O ground turkey in the freezer.
Ingredients:
-1 Package Ground Turkey
-1 Bag Fresh Spinach
-1 Package Fresh Mushrooms
-2 Cans Beef Broth
-Crushed tomatoes, at least 1 large can.
-1 Large Onion
-1 Can Corn
-Hot peppers
-Garlic Cloves
Cook turkey separately; season it well.
Combine all other ingredients and allow to simmer for about 30 minutes.
Add turkey towards the end.
Crush up garlic cloves, approximately 4-5
Add seasonings to taste; I personally just put in a ton of garlic powder, some cumin, whatever I found in my ghetto cabinet that seemed to go. You may need to salt it up a bit.

STUFFED BELL PEPPERS
These suckers are my secret weapon, with about 150 calories, and thats a max amount. How I did them last week:
YOU NEED:
4 Green Bells- hollowed and seeded.
Morningstar Ground Veggie Meat
Med-Large Onion
Bag of Fresh Spinach
Laughing Cow Cheese Triangles
Red Beans
Heat oven 375 degrees
Cook all ingredients separately, then load each bell with 3/4 cup veggie crumbles, 1/4 cup beans, and the rest with spinach/onion sautee. Shove a cheese triangle in the middle of the layers, pop in the oven for about 20 min, or so, keeping an eye on it, and there ya go.
Dont forget the Sriracha. :)
